Jeff's Pork Chop Parmesan

My wife like anything "parmesan." This recipe was inspired by the shrimp parmesan recipe in the Atkins/Gare cookbook and a desire to have something "different" for dinner. Note that there is no salt added to this recipe. Normally, the cheeses add plenty of salt. If you really want more salt, try adding a little "lite" salt to the chops before searing. This recipe is not appropriate for Atkins induction or for those for whom tomatoes are a "trigger" food.


2-4  large  Boneless pork chops (1" thick is best)
1    cup    Fresh or quick tomato sauce
1/3  lb     Whole milk mozzarella cheese, shredded
4    tbl    Fresh grated parmesan (or to taste)
	    Olive (or other cooking) oil

Preheat oven to 350F.  Heat olive oil in a skillet over high
heat and sear chops on both sides.  Place chops in a baking
dish, cover evenly with sauce then parmesan cheese then
mozzarella.  Cook about 30 minutes or until the chops are
cooked through and the cheese is lightly browned.  Serves 2.

Carb Count: Entire recipe - approximately 24 grams. 12 grams per serving.
